Join us at the 9th Street Bistro in Noblesville on May 17 as we celebrate International Heritage Breeds Week featuring our Ossabaw Hogs. Like all of our animals, the Ossabaw Hog is a fascinating creature. Its breed is indigenous to Ossabaw Island off the coast of Georgia, and the hogs are descendants of pigs Spanish sailors brought to the New World more than 400 years ago.
As a first step towards activating the future of Agriculture at Conner Prairie, and to teach people where their food comes from, this is just one of a series of monumental agricultural initiatives at Conner Prairie aligned with our mission to inspire curiosity and change the way the world views and uses Museums.

1 Head Cheese – apple compote – fried sage – focaccia crostini
2 Rib Tostada – corn tortilla – refried fava beans – salsa
3 Crispy Polenta – shaved guanciale – lardo – chimichurri
4 Green Salad – smoked lardons – local veggies – ramp vinaigrette – hard-boiled egg
5 Espresso-rubbed Loin – fig & apricot strudel – red eye gravy
6 Bloody Boar Cocktail (made with pork stock & Slaughter House whiskey)
7 Carbonara – corned ham, pasta, cheese, egg
8 Smoked Shoulder en papillote – pickled mustard greens
9 Tenderloin Mincemeat Pie – lardo pie crust – paw paw gelato
